Lizzie’s Homemade Oatmeal Cookies

- 2 sticks unsalted, organic butter, softened
- 1 cup dark brown sugar
- 1/3 cup baker’s sugar
- 2, large, farm fresh eggs
- 1 tablespoon vanilla extract
- 1 1/2 cups unbleached flour
- 1/3 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/4 teaspoon ground ginger
- 3 cups old fashioned rolled oats (not instant)
- 1 1/2 cup raisins
Instructions
Preheat oven to 350°F. Line two large cookie sheets with parchment paper or grease with a little butter. Take a large mixing bowl and beat butter and sugars until light and creamy. Beat in eggs, one at a time and vanilla. Combine flour, salt, baking powder and spices in a separate bowl. Add flour mixture to butter mixture in the large bowl and blend. Add oats and raisins and mix thoroughly. Scoop out mixture into three-dozen large tablespoons, leaving room between each on the baking sheets. Bake between nine and thirteen minutes until edges are golden brown. Soft centers will set as the cookies cool.
