Out West Whiskey Old-Fashioned

Muddle one sugar cube with a teaspoon of water and two dashes of Angostura bitters in the bottom of an Old-Fashioned glass until the sugar dissolves. Add one and a half ounces of whiskey (in order of Prohibition era popularity), straight rye, bourbon, Canadian or blended scotch — and stir. Add two to three ice cubes, stir a little more, squeeze a large swatch of thin-cut lemon peel over the top and drop it in. Let it sit a minute or two if you are able to resist.
