Lori’s Banana Nut Muffins With Chocolate Chips


  • Take four or five large overripe bananas (2 cups)
  • 1 1/2 cups baker’s sugar
  • 1 1/2 sticks unsalted organic butter, melted
  • 3 large, farm fresh eggs
  • 2 3/4 cups unbleached flour
  • 2 1/2 teaspoons baking soda
  • 6 ounces of dark chocolate chips


Preheat the oven to 350°F and place twenty-four paper liners in muffin tins. In a large bowl, mix sugar, bananas, butter and eggs. Whisk flour, baking soda and salt in a separate bowl. Add the flour mixture to the banana mixture and stir in chocolate chips. Divide batter between the two muffin pans and bake for around 25 to 30 minutes.
