Granny Maureen’s Irish Soda Bread

Fit for a king

Ingredients

  • 4 handfuls of plain flour (approximately four cups)
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • generous knob of butter
  • 1 cup of raisins
  • 1 1/2 to 1 3/4 cups of buttermilk

Instructions

Put dry ingredients in a large baking bowl and mix well. Work in butter. Add raisins. Make a well in mixture and add buttermilk until dough is stiff. Knead gently and shape into a large circle. Turn onto a floured baking tray. Make a deep cross in the middle of the dough. Cook at 375°F for 40 to 45 minutes. Toast cooked bread and slather with butter.
